Brown Butter Apple Muffins



Monday is little girl's last day of preschool.

She wanted to bring one last treat to share with her friends before venturing out into the wild world that is the public school system. We decided on apple muffins baked in heart-shaped silicone cups.


Most apple cake recipes I found call for so much oil, I don't get it. Why can't we use butter? I wanted a butter muffin. Butter, butter, butter. Finally I chose Mark Bittman's Sweet and Rich Muffins, browned the butter, added some cinnamon and nutmeg and stirred in a grated apple.

They actually turned out quite yummy, though they they rose more than I expected and aren't exactly heart-shaped. But hopefully once the little ones bite into them, they won't mind that the cakes look more like rocks. But they'll know Sabrina loves them.



Brown Butter Apple Muffins
Adapted from Sweet and Rich Muffins from How to Cook Everything by Mark Bittman

6 tablespoons butter
3/4 cup sugar

1/2 teaspoon salt
3 teaspoons baking powder
3/4 teaspoons cinnamon
1/8 teaspoon nutmeg
2 cups (about 9 ounces) all-purpose flour

2 eggs
1/2 cup milk

1 medium apple, peeled, cored and grated

Preheat oven to 400 degrees.

In a small heavy-bottomed saucepan, heat the butter on low until it turns a dark golden brown and smells caramel-ly. Remove from heat and let cool slightly.

Whisk together flour, salt, baking powder, cinnamon and nutmeg. Set aside.

Beat eggs with the milk.

By hand or using a mixer, cream together the sugar and browned butter. Add about a third of the flour mixture and a third of the milk mixture and stir. Repeat until flour and milk are used up. Stir in the grated apple until evenly incorporated.

Scoop into muffin cups about two-thirds full. Bake 20 to 30 minutes or until a toothpick inserted comes out clean.

Makes about 18.

For some reason, good tomatoes are hard to find. Tomatoes with no taste suck . . . suck suck suck suck suck!!!

So when I was able to procure some tasty heirloom tomatoes from Sierra Produce in Arcadia, I ordered up a case to enjoy in its purist form . . . raw with just simple adornment.




Tomato Mozzarella . . . laura style!

heirloom tomatoes . . . sliced
fresh basil . . . chiffonade
fresh burrata . . . torn into pieces
fruity olive oil
good basalmic vinegar
a few grinds of sea salt and green peppercorns

By the way . . . fresh burrata is a glorious cheese. The problem is finding GOOD burrata. Gioia Cheese Company in South El Monte supplies some of the best restaurants in the Los Angeles area. Don't settle for a lousy substitute. . . life is short... .enjoy your food! bon appetit!

Malibu Wine Fest ~ 8/29/2009

We attended even though it was outdoors and blazing hot with the hopes of spotting celebrities . . okay . . that was me . . not Alan! I was hoping for past attendees like Matthew McConaughey and Cindy Crawford, but was treated to Tori Spelling . .. hmmm . . doesn't seem quite fair, does it?!! lol

Anyway . . . a few stand out restaurants participating in this event were Saddlepeak Lodge in Malibu, the Beachcomber, and I wish I could say celebrity hang out, Moonshadows. Moonshadows kept running out of the tuna tartar they were serving so we never got to try the food. foo foo!!

Oh . . . and last, but not least, Watergrill! Watergrill rocks it. They set up an oyster bar, and shucked them little delicacies on site. If anyone has ever tried shucking oysters with speed. .. it can be an adventure!!

BTW, the best restaurant steak I've ever had was at the Watergrill. . . me and that beef! moooooooo!!

hola!

Hello Everyone!

This is Trixy Kitty, and welcome to Debbie's new Lee Cuisine blog! I have no idea how this works, and to make it even more confusing, I take it that it's a blog on Chinese food. I have no idea how to make Chinese food ... but give me parts o'cow, and I'm good to go!

It's Thursday August 27th, and I'm all happy because I just received my 1/8th of a cow. I checked the boxes that arrived at my office, and I'm now the proud owner of 80 lbs o'moo!! moo moo!! Let's see what kind fo mischief I can make with my new acquisition!

BTW . . . happy cows make the best beef. This particular one was blessed with rambling the open plains of Missouri before being grain fed for his last happy days. Paradise Locker Meats . . . they rock it!
